Mojo Pork Taco Lasagna

Ingredients

Magical Mojo Marinade

  • ½ cup Magical Olive Oil
  • 2 cups cilantro
  • 10 cloves garlic, chopped
  • 5 green onion whites
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon chopped mint
  • 1 tablespoon orange zest
  • 1 tablespoon Adobo seasoning
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • Salt and pepper to taste

Lasagna

  • ½ cup Magical Olive Oil
  • 2 pounds boneless pork chops
  • 1 can (16 ounces) refried beans
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14½ ounces) Mexican-style diced tomatoes, undrained
  • ½ cup mojo drippings
  • ½ cup onion, diced
  • ½ cup multicolored bell peppers, chopped
  • Salt and pepper to taste
  • 12 flour tortillas, 8-inch

How-to

Magical Mojo Marinade

  1. Place all the ingredients inside your MagicalButter machine, and secure the lid.
  2. Press the Blend/Clean button.
  3. When the short cycle is complete, your Magical Mojo Marinade is ready to use.Lasagna

Lasagna

  1. Preheat your oven to 275°F.
  2. Lay the pork chops flat inside a glass baking dish of 9 by 13 inches.
  3. Evenly pour the Magical Mojo Marinade over the pork.
  4. Bake for 4 hours. Remove the dish from the oven, and increase the temperature to 350°F.
  5. Shred the cooked pork, and place it in a large mixing bowl. Add the mojo drippings, and stir thoroughly.
  6. In a large skillet on medium-high, heat the Magical Olive Oil. Reduce heat to medium, and sauté the onion, bell peppers, salt, and pepper for 10 minutes, stirring frequently.
  7. Add the refried and black beans and tomatoes. Reduce heat to low, and simmer uncovered for 15-20 minutes.
  8. In a greased 13-by-9-inch baking dish, place a layer of tortillas.
  9. Spread half the bean mixture over the tortillas, and top with ¾ cup of cheese.
  10. Add another layer of tortillas, top with half the pork, then ¾ cup of cheese.
  11. Repeat layering steps, topping the dish with the remaining tortillas and cheese.
  12. Cover the dish with aluminum foil, and bake it on the center rack for 30 minutes, or until your Mojo Pork Taco Lasagna 2.0 is heated through and the cheese is melted. ¡Enjoy!
